[Turkey bites before entering oven]

Ingredients

500g lean turkey mince

1 large carrot (finely grated)

1 large zucchini (finely grated and squeezed of excess water)

1 small red onion diced finely

2 Tbsp fresh chives chopped

2 Tbsp salt-reduced tomato paste

1 large egg

½  cup (~125g) natural wheat germ

2 Tbsp Tuscan seasoning mix

Method

1. Pre-heat oven to 180C (fan forced) and line 2 baking trays with non-stick baking paper

2. Place all ingredients into a large mixing bowl and combine well (use your hands for this to get everything combined together)

3. Take a heaped teaspoon of the mix and roll into small balls and place on baking tray

4. Spray mince balls lightly with unsaturated oil

5. Place in oven and cook for approximately 25 min or until brown

Serves approximately 6-8 persons as decent appetisers, or try with a side salad as a complete meal!
